Method

  1. Synthesize the Gatte: In a mixing vessel, combine the besan with the designated oil fraction, curd, a micro-dose of turmeric and red chilli powder, carom seeds (ajwain), and foundational salt. Force the mixture into a structurally rigid dough.

  2. Roll the dough into even cylinders about half an inch thick. Boil them in plenty of water for 10-12 minutes, until they float and small blisters appear on the surface. Lift them out, cool them, and slice them crosswise into even discs.

  3. Optional but worth doing: shallow-fry the boiled gatte discs in a little ghee for 2 minutes to firm up the outside. Set them aside.

  4. Start the pulao: heat the ghee in a heavy pan or pressure cooker until it shimmers. Add the whole spices and cumin seeds and let them crackle.

  5. Add the thinly sliced onions. Fry them steadily until they turn a deep golden brown.

  6. Add the ginger-garlic paste and the slit green chillies. Sauté for 60 seconds to cook off the raw notes.

  7. Add the dry spices: turmeric, the remaining red chilli powder and garam masala. Add a splash of water straight away so they do not burn.

  8. Drain the soaked basmati thoroughly. Add the grains to the pan. Fold them through very gently for 2 minutes to coat them in the spiced fat.

  9. Add the gatte discs to the pan. Pour in the measured water and add the salt. Stir very gently.

  10. Drive the liquid to a rolling boil, then instantly throttle the thermal output to its lowest parameter. Establish a hermetic seal over the vessel. Enforce a 15-minute blind simmer until total moisture assimilation is achieved.

  11. Turn off the heat. Let it rest, undisturbed, for 5 minutes. Top with freshly chopped coriander, fluff it gently and serve.

Tip
