Method

  1. In a sturdy pot or pressure cooker, heat some of the oil over medium heat. Add the broken wadiyan and shallow-fry them until a firm, golden-brown crust forms. Lift them out and set aside. Sealing them this way is what stops them dissolving into mush later in the boil.

  2. Inject the remaining volume of oil into the heated chamber. Deliver the cumin seeds, mandating an aggressive, instant crackle to unlock their essential oils.

  3. Add the very thinly sliced onions. Fry them steadily until they caramelize to a deep golden brown.

  4. Add the ginger-garlic paste and the slit green chillies. Sauté over high heat for 60 seconds to cook off the raw, sharp notes.

  5. Add the roughly chopped tomatoes, along with the turmeric and the mild Kashmiri red chilli powder. Cook until the tomatoes break down completely into a thick paste.

  6. Return the fried wadiyan to the pot. Toss well so they are coated in the spiced onion-tomato base.

  7. Drain the soaked basmati thoroughly. Add the drained rice to the pot. Stir very gently for 1 minute to coat the grains without breaking them.

  8. Pour in the measured water and add the salt. Go easy on the salt: Amritsari wadiyan are already heavily salted and spiced.

  9. Command a devastating, rolling boil, then instantly throttle the thermal output to its lowest threshold. Establish an impenetrable lid seal. Enforce a strict 12-15 minute blind simmer, forcing the rice to hyper-extend and the wadiyan to hyper-inflate while yielding to a tender submission.

  10. Turn off the heat. Let it stand for 5 minutes. Uncover, scatter the surface generously with garam masala and freshly chopped coriander, fluff it gently and serve piping hot.

How to tell it's done

Long, separate grains of rice around soft, spice-soaked lentil dumplings that give up a burst of flavour as soon as you bite into them.

Getting it right

Tip

The one rule that matters here: fry the wadiyan before they go into the rice. Unfried, they dissolve into a mushy pulp and turn the whole dish bitter.

What to serve it with

Rich and highly spiced enough to stand on its own. Serve it with a cooling cucumber or boondi raita to balance the heat.
