Method

  1. Take a portion of the boiled sweet corn kernels and blend them into a coarse paste with a splash of water.

  2. In a saucepan, heat the butter on low flame. Add the coarse sweet corn paste and sauté for 2 minutes to release its sweet aroma.

  3. Add the remaining whole boiled sweet corn kernels and the measured water. Bring the mixture to a gentle boil.

  4. Lower the heat. Whisk the prepared cashew paste into the milk, and pour this rich mixture into the saucepan.

  5. Season the soup with salt and white pepper powder. Stir well and let it simmer on very low heat for 5 minutes, allowing it to thicken into a creamy shorba.

  6. In a separate tiny pan, toast the roughly chopped cashews in a drop of butter until golden, and stir them into the soup for added crunch.

  7. Turn off the heat, garnish with a little fresh coriander, and serve warm.
