You'll need: Stovetop.

Method

  1. Take a portion of the boiled sweet corn kernels and blend them into a smooth paste with a little water. Keep the remaining whole kernels aside.

  2. Heat the butter in a soup pot on medium heat.

  3. Add the finely minced green chilli (and ginger if using). Sauté for just 10 seconds.

  4. Add the finely minced cabbage and capsicum. Stir-fry for 1 minute.

  5. Pour in the sweet corn paste and the whole corn kernels. Mix well.

  6. Add the measured water, salt, and black pepper. Bring the soup to a rolling boil.

  7. Lower the heat. Give the cornflour slurry a quick stir (as cornflour settles at the bottom) and slowly pour it into the boiling soup while stirring continuously.

  8. Simmer for 2-3 minutes until the soup thickens and turns glossy.

  9. Turn off the heat and serve steaming hot.
