Method
In a deep pot, heat the cooking oil over medium flame. Add the minced garlic and julienned ginger. Sauté for 30 seconds until fragrant.

Add the finely chopped onion and sauté for 2-3 minutes until they become translucent. Do not brown the onions to maintain the broth's clear color.

Add the tiny chicken cubes. Toss them in the aromatics for 4-5 minutes until the outside of the chicken turns pale white and seals.
4–5 min
Pour in the measured water and add salt. Bring the pot to a rapid boil. As it boils, skim off any white scum that floats to the surface using a spoon.
Reduce the heat to low, cover the pot loosely, and let it simmer for 20 minutes until the chicken is extremely tender and the broth is flavorful.

Stir in the freshly cracked black pepper and fresh coriander.
Turn off the heat and serve immediately in large bowls.
