Ingredients

You'll need: Stovetop, Pressure Cooker.
Method
In a pressure cooker, add the soaked mung dal, a portion of the water, and a pinch of salt. Cook for 3 whistles on medium heat until the dal is completely mushy.
Let the cooker depressurize. Whisk the cooked dal vigorously until smooth, or blend it quickly for a completely silky texture. Add the remaining water to make it soup-like.
Heat the ghee in a small tempering pan. Add the mustard seeds and cumin seeds. Once they crackle, add the asafoetida and curry leaves.
Add the finely grated ginger to the tempering and sauté for 10 seconds. Pour this sizzling hot tempering over the thinned dal.

Bring the soup to a gentle simmer for 5 minutes, allowing the flavors to meld.

Turn off the heat. Stir in the fresh lemon juice and chopped coriander.
Serve immediately while warm.

A very light, pale yellow, watery broth carrying the nutty aroma of ghee and the zing of fresh ginger and lemon.
