Method
Place the red bell pepper halves, tomato halves, onion chunks, and garlic cloves on a baking tray.
Drizzle with olive oil, sprinkle a little salt, and toss everything until coated.
Roast in the preheated oven for 25 minutes until the skins of the peppers and tomatoes are blistered and slightly charred.

Remove from the oven and let them cool slightly. You can peel off the charred tomato and pepper skins if you prefer a silkier texture, but leaving them adds smokiness.
Transfer all the roasted vegetables and any juices from the tray into a blender. Blend until completely smooth.
Pour the puree into a soup pot. Add the water (or vegetable stock) to adjust the thickness to your liking.
Add the dry oregano, chilli flakes, black pepper, sugar, and salt. Stir well.
Bring to a gentle simmer on low heat for 5 minutes.

Turn off the heat. Serve hot with a swirl of fresh cream on top.
