Goan Coconut & Coriander Soup

Ingredients

You'll need: Stovetop.
Method
In a blender, combine the fresh coriander, green chilli, and garlic cloves with a splash of water. Blend to a very smooth, bright green paste.
In a pot, heat the coconut oil on low flame. Add the cumin seeds and let them sizzle for a few seconds.
Pour the blended green coriander paste into the pot. Sauté gently on low heat for 2 minutes to remove the raw edge of garlic.

Add the remaining water and salt. Let the mixture come to a gentle simmer.
Lower the heat completely. Stir in the thick coconut milk. Warm the soup through for just 2-3 minutes; do not let it boil vigorously or the milk will split.

Turn off the heat. Stir in the fresh lemon juice, mix well, and serve warm.

A pastel green, milky, and extremely silky broth with prominent earthy, citrusy, and coconut notes.

Getting it right
Tip
Adding the lemon juice while the soup is actively boiling will curdle the coconut milk. Always add it off the heat.
