Method

  1. Ensure your cooked rice is completely cold. Warm rice will turn into a sticky paste when tossed in the wok.

  2. Heat oil in a wide wok or large frying pan over high heat until it is smoking hot.

  3. Add the minced garlic, green chilli, and spring onion whites. Stir-fry rapidly for 15 seconds. Do not let the garlic burn.

  4. Add the boiled sweet corn kernels and half of the spring onion greens. Toss vigorously for 1 minute.

  5. Add the cold cooked rice to the wok. Immediately pour the soy sauce, vinegar, black pepper powder, and salt directly over the rice.

  6. Using a spatula, toss and stir-fry continuously on high heat for 3-4 minutes. Ensure every grain is coated and picks up a slight smoky flavor from the wok.

  7. Turn off the heat. Garnish with the remaining spring onion greens, give it a final mix, and serve hot.
