  1. Place a heavy-bottomed pot or pressure cooker over a medium flame and melt the ghee until it shimmers. Introduce the cumin, bay leaf, cloves, and cinnamon, allowing the heat to expertly draw out their essential oils until they sizzle.

  2. Add the finely sliced onions to the aromatic base. Sauté with patience until the edges begin to caramelize into a delicate, translucent golden shade.

  3. Incorporate the vibrant mixed vegetables and the slit green chilli. Sauté actively for 2 minutes to gently sear the vegetables and lock in their vivid colors.

  4. Add the drained basmati. Fold it through gently with the vegetables for 1 minute, so the grains are coated without breaking.

  5. Pour in the measured hot water, which keeps the pot from losing heat, and season with salt. Stir once to combine.

  6. Cover the pot and cook gently over the lowest heat until the liquid is fully absorbed, about 10-12 minutes. If you prefer, pressure-cook it for 2 whistles instead.

  7. Remove entirely from the heat source. Impose a strict 5-minute resting period to stabilize the steam before elevating the grains gently with a fork.
