Ingredients

You'll need: Stovetop, Pressure Cooker.

Method
Place a heavy-bottomed pan or pressure cooker on medium heat and warm the cooking oil.
Add the cumin seeds and bay leaf. Allow the cumin to crackle for a few seconds to release its earthy aroma.
Add the sliced onions. Sauté continuously until they turn a light golden brown color.
Stir in the ginger garlic paste and cook for 1 minute until the raw garlic smell completely fades.

Add the chopped tomatoes, turmeric powder, red chilli powder, and garam masala. Cook until the tomatoes are soft and mushy, forming a thick masala base.
Add the cubed potatoes to the pan and toss them in the masala for 2-3 minutes.

Drain the soaked basmati rice completely and add it to the pan. Gently fold the rice into the potato masala, taking care not to break the grains.
Pour in the measured water and add the salt. Stir well and bring the mixture to a rolling boil.
Cover the pan with a tight-fitting lid, lower the heat to a simmer, and cook undisturbed for 12-15 minutes until all the water is absorbed.

Turn off the stove and let the pulao rest for 5 minutes. Garnish with freshly chopped coriander and fluff gently with a fork before serving.
