Ingredients
Quantities are for 2 servings.
You'll need: Stovetop.
Includes 30 minutes for sabja seeds to bloom plus active layering time.
Method
In a pitcher, combine the chilled full fat milk with half of the Rooh Afza syrup. Stir well until the milk turns a beautiful pastel pink. Keep it refrigerated.
Take two tall serving glasses. Drizzle the remaining Rooh Afza syrup generously along the inner walls of the glasses to create an appealing visual streak.
For the first layer, add a couple of spoonfuls of the bloomed sabja (sweet basil) seeds to the bottom of each glass.
Next, add a generous portion of the boiled and cooled soft falooda sev over the sabja seeds.
Spoon the thick rabdi over the sev to create a creamy layer.
Slowly pour the chilled rose-flavored milk into the glasses, filling them up to an inch below the rim.
Top each glass with a large scoop of vanilla ice cream. Garnish with a few extra drops of Rooh Afza and serve immediately with a long spoon and thick straw.
How to tell it's done
Each glass should show distinct layers: slippery sev, bloomed sabja, rose milk, thick rabdi, and melting ice cream.
Getting it right
Tip
Keep the milk, rabdi, and sev cold before assembling so the layers stay visible and the ice cream melts slowly.
What to serve it with
Serve as a grand finale dessert-drink after a heavy festive meal like Biryani.
