Method

  1. Prepare your serving glasses by rubbing a slice of lemon around the rims, then dipping the wet rims into a small plate dusted with chaat masala.

  2. In a cocktail shaker or a heavy mixing glass, add the fresh mint leaves and the green chilli.

  3. Use a muddler or the back of a wooden spoon to gently crush the mint and chilli to release their fresh aroma and mild heat.

  4. Pour in the sweet mango puree, fresh lemon juice, sugar syrup, and half of the chaat masala. Shake or stir well to combine the sweet, tangy, and spicy elements.

  5. Fill the rimmed serving glasses generously with ice cubes.

  6. Divide the spiced mango mixture evenly between the glasses, then top them all the way up with chilled soda water. Stir gently from the bottom up to mix, and serve.

Fizzy, bright, and refreshing liquid with a quick kick of green chilli heat followed by tropical mango sweetness.

Getting it right

Tip

To control the heat, remove the white membrane and seeds from the green chilli before muddling. You want fresh green chilli flavor, not harsh chilli burn.
