Includes 2 hours of sabudana soaking; active boiling and blending takes about 20 minutes.
Method
Boil the water in a deep saucepan. Add the soaked sabudana and cook on medium heat until the pearls turn completely translucent and glossy.
Drain the cooked sabudana through a fine mesh sieve and immediately rinse under cold running water to stop the cooking process and wash away excess starch.
Divide the chewy, translucent sabudana pearls equally at the bottom of your serving glasses.
In a blender, combine the mango puree, chilled full fat milk, and condensed milk. Blend until the mixture is thick, smooth, and frothy.
Add a generous amount of ice cubes into the serving glasses over the sabudana.
Pour the thick mango milk directly over the ice and pearls. Serve immediately with a wide boba straw.

The glass should have chewy sabudana pearls at the bottom and thick, smooth mango milk poured over ice.

Rinsing the boiled sabudana with cold water is absolutely crucial—it prevents the pearls from clumping into a single giant jelly mass.
