Includes 30 minutes for sabja seeds to bloom; shake and serve right before drinking.

Method

  1. In a cocktail shaker or a tall, sturdy glass with a tight lid, add the finely chopped pineapple chunks and the slit green chilli.

  2. Using a muddler or the back of a wooden spoon, gently muddle the pineapple and chilli together to release the sweet juices and fresh chilli aroma.

  3. Add the soaked and bloomed sabja seeds, freshly squeezed lemon juice, and the sugar syrup into the shaker.

  4. Drop in the ice cubes. The ice helps blend the flavors while shaking.

  5. Seal the shaker tightly and shake firmly for about 15 to 20 seconds; the word 'Kulukki' means 'shaken' in Malayalam.

  6. Open the shaker, divide the mixed base evenly into serving glasses, and top it up right to the brim with chilled soda water.

  7. Stir gently once and serve immediately for a cold, sweet, sour, and spicy drink.

Tip

Keep the green chilli in the glass while serving if you want the spicy note to build gradually as the drink sits.
