Ingredients
Quantities are for 2 servings.
Active time only; use more ice cream than milk to keep the shake thick.
Method
Place the digestive biscuits in a ziplock bag and crush them into coarse crumbs using a rolling pin. Set aside one tablespoon of the crumbs for garnish.
Take your serving glasses and creatively drizzle a little extra dulce de leche around the inside walls to create a beautiful caramel visual.
In a powerful blender, add the vanilla ice cream, the remaining crushed digestive biscuits, chilled full fat milk, dulce de leche, and ice cubes.
Blend on high speed until the mixture becomes thick, uniform, and creamy.
Pour the thick shake directly into the prepared caramel-drizzled glasses.
Top generously with the reserved crushed biscuit crumbs and serve immediately with a wide straw.
How to tell it's done
The shake should be thick and creamy, with small biscuit crumbs suspended throughout for a gentle crunch.
Getting it right
Tip
Use ice cream for thickness rather than extra milk; too much milk will make the shake thin.
What to serve it with
Serve alongside hot, salty French fries for a classic sweet-and-salty diner pairing, or enjoy on its own as a rich dessert drink.
