Ingredients

Quantities are for 2 servings.

You'll need: Stovetop.

Most of the time is slow simmering, which gives the goat meat time to soften before the dumplings go in.

Method

  1. Season Goat Meat with 0.5 tsp Salt and Ground Black Pepper.

  2. Heat Cooking Oil in a heavy pot and brown the Goat Meat for 6 to 8 minutes.

  3. Add Onion and Garlic, then cook for 3 minutes.

  4. Stir in Tomato Puree, Thyme, Ground Allspice, Bay Laurel Leaf, Scotch Bonnet Pepper, and 3.5 cups Water.

  5. Cover and simmer for 65 to 70 minutes, until the Goat Meat is becoming tender.

  6. Add Carrot and Potato, then simmer for 15 minutes.

  7. Mix All-Purpose Flour with the remaining Salt and enough remaining Water to make a firm dough.

  8. Pinch small dumplings into the stew and simmer for 10 to 12 minutes, until the dumplings are cooked through.

  9. Remove the whole Scotch Bonnet Pepper and Bay Laurel Leaf before serving.

How to tell it's done

The goat should be tender, the broth should be savory and lightly thickened, and the dumplings should be soft but cooked through.

Tip

Keep the simmer gentle; goat meat becomes tender with time, but hard boiling can make it tough.

Serve hot as a full stew bowl with bread or boiled provisions.

Common mistakes

The goat is chewy when the dumplings are already done.
Simmer the goat until it is nearly tender before adding dumplings. The dumplings need only a short cook and cannot fix undercooked meat.

Substitutions

  • Goat Meat — Use Boneless Mutton if Goat Meat is unavailable, but the stew will have a slightly different flavor.
  • Scotch Bonnet Pepper — Use Habanero Pepper if needed, keeping it whole for controlled heat.

Storing and reheating

Refrigerate goat water stew for up to 3 days and reheat gently until hot. It can be frozen for up to 2 months, but the dumplings are softer after thawing.
