Ingredients
Quantities are for 2 servings.
You'll need: Stovetop.
The coconut milk reduces for about 15 minutes before the fish goes in, making a thick sauce that clings to the fillets.
Method
Season White Fish with Lemon Juice, 0.25 tsp Salt, and Ground Black Pepper.
Pour Coconut Milk into a wide pot and simmer for 10 to 12 minutes, stirring often, until it starts to thicken.

Add Onion, Garlic, Tomato, Green Bell Pepper, Carrot, Green Plantain, Thyme, Scotch Bonnet Pepper, and remaining Salt.
Cover and simmer for 15 minutes, until the plantain and vegetables are nearly tender.
15 min
Place the seasoned White Fish into the coconut sauce and spoon sauce over the top.
Cover and simmer gently for 8 to 10 minutes, until the fish is cooked through.
8–10 min
Remove the whole Scotch Bonnet Pepper before serving.

Storing and reheating
Refrigerate fish rundown for up to 2 days and reheat gently over low heat. Freezing is not recommended because the coconut sauce can split and the fish becomes dry.
