Ingredients
Quantities are for 2 servings.
You'll need: Stovetop.
Most of the time is a gentle 70-minute simmer that softens the beef enough to shred cleanly.
Method
Heat Cooking Oil in a deep pan and brown the Beef Chuck pieces on all sides.
Add Onion, Red Bell Pepper, Green Bell Pepper, and Garlic, then cook for 5 minutes until softened.

Stir in Tomato Puree, Beef Stock, Ground Cumin, Dried Oregano, Bay Laurel Leaf, Vinegar, and Salt.
Cover and simmer gently for about 75 minutes, until the beef is tender enough to pull apart.

Remove the beef, shred it with forks, and return it to the pan.
Add Green Olives and Capers, then simmer uncovered for 10 to 15 minutes until the sauce clings to the shredded beef.

The beef should be tender strands in a glossy tomato-pepper sauce, not dry chunks.

Simmer slowly rather than boiling hard; a gentle simmer gives the beef a pull-apart texture without drying it.

- The beef stays in firm chunks instead of shredding.
- Keep simmering gently until a fork pulls the meat apart. Adding more heat dries the beef before the connective tissue softens.
Substitutions
- Beef Chuck — Use brisket or another stewing beef if chuck is unavailable, but keep the simmer gentle and cook until it shreds easily.
- Green Olives — Skip the olives only if necessary; the stew will lose some of ropa vieja's briny contrast.
Storing and reheating
Refrigerate the stew in a shallow container for up to 3 days. Reheat gently with a splash of water if the sauce thickens; it freezes well for up to 2 months.
