Ingredients
Quantities are for 2 servings.
You'll need: Stovetop.
The stew simmers slowly for about 40 minutes so the breadfruit absorbs the coconut milk and stays intact.
Method
Heat Cooking Oil in a heavy pot and cook Onion and Garlic for 3 minutes.

Add Ground Turmeric, Thyme, Coconut Milk, Water, and the whole Scotch Bonnet Pepper.
Layer in the Breadfruit wedges, Salt Cod, and Callaloo Leaves without stirring too much.
Cover and simmer gently for 40 to 45 minutes, until the Breadfruit is tender and the coconut milk has reduced into a thick sauce.

Taste and add Salt only if the Salt Cod has not seasoned the stew enough.
Remove the whole Scotch Bonnet Pepper before serving unless extra heat is desired.

- Salt Cod — Use another firm salted fish only when Salt Cod is not available.
Storing and reheating
Refrigerate oil down for up to 2 days because it contains salt fish and coconut milk. Reheat gently with a splash of water; freezing is not recommended because the breadfruit and coconut sauce change texture.
