Ingredients

Quantities are for 2 servings.

You'll need: Stovetop.

No inactive time is required; roast the semolina gently and serve ravo while it is soft and flowing.

Method

  1. Heat ghee in a heavy-bottomed pan over medium-low heat. Add the semolina and roast continuously for 4-5 minutes until it turns aromatic and slightly pinkish. Do not let it brown.

  2. In a separate saucepan, warm the full fat milk (do not bring to a rolling boil, just warm).

  3. Gradually pour the warm milk into the roasted semolina while stirring constantly with a whisk to ensure no lumps are formed.

  4. Cook the mixture on low heat for 5-7 minutes, stirring continuously, until the semolina absorbs the milk and the mixture thickens to a pudding-like consistency.

  5. Add the sugar and stir well. The mixture will thin out slightly as the sugar melts. Continue to cook for another 3-4 minutes until it thickens again.

  6. Turn off the heat. Stir in the rose water and nutmeg powder.

  7. Transfer to a serving dish and garnish generously with slivered almonds and ghee-fried raisins.

How to tell it's done

Ravo should be softer than sooji halwa, creamy and lightly flowing when hot.

Getting it right

Tip

Pour warm milk gradually into roasted semolina while whisking. Adding it all at once can create lumps.

The ravo turns lumpy or stiff.
Roast on medium-low heat and add warm milk slowly while stirring. Extra cooking after thickening makes it heavy.

Refrigerate ravo covered for up to 3 days. Reheat gently with a splash of milk to loosen it.
