Ingredients

Quantities are for 2 servings.

You'll need: Stovetop.

Allow 30 minutes for sabja seeds to swell and keep the milk cold before layering the falooda.

Method

  1. Take the serving glasses. Swirl a portion of the Rooh Afza (rose syrup) around the inner walls of each glass for a beautiful stained-glass effect.

  2. Layer 1: Add a generous portion of the swollen Sabja seeds to the bottom of each glass.

  3. Layer 2: Add a portion of the boiled Falooda Sev over the seeds.

  4. Layer 3: Add a portion of the bright yellow mango puree.

  5. Layer 4: Drop in a handful of set mango jelly cubes and some fresh mango chunks.

  6. Pour the well-chilled sweetened milk into the glasses until they are about 3/4 full. Give one gentle stir with a long spoon.

  7. Layer 5: Float a large scoop of mango or vanilla ice cream on top of the milk.

  8. Garnish: Top the ice cream with remaining fresh mango cubes, chopped nuts, a sprinkle of tutti frutti, and a final drizzle of Rooh Afza.

  9. Serve immediately with a long spoon and a thick straw.

How to tell it's done

A good falooda has swollen seeds, slippery sev, cold milk, mango jelly, fruit pieces and creamy ice cream in distinct layers.

Getting it right

Tip

Layer gently and keep the milk very cold. Stirring like a milkshake blurs the colors and melts the ice cream too fast.

What to serve it with

Serve immediately in tall glasses with a long spoon, thick straw, chopped nuts and extra mango cubes.

Common mistakes

The falooda turns muddy and melted.
Chill every component and pour slowly down the side of the glass. Assemble only when ready to serve.

Storing and reheating

Store falooda components separately in the refrigerator for up to 1 day. Do not store assembled falooda because the layers collapse and the ice cream melts.
