Method

  1. Heat a large tawa or wide pan on medium heat and add the measured butter. Once melted, add the finely chopped onions and sauté until translucent.

  2. Stir in the ginger garlic paste and finely diced capsicum. Cook for 2-3 minutes until the capsicum softens slightly.

  3. Add the finely chopped tomatoes and a pinch of salt. Mash the mixture vigorously with a potato masher right on the tawa until it resembles a thick paste.

  4. Mix in the boiled mixed vegetables, pav bhaji masala, and the remaining salt. Sauté the masala until the butter starts oozing from the sides.

  5. Add a splash of water if the masala is too dry. Then, add the chilled cooked rice and toss gently to coat every grain evenly with the red buttery masala.

  6. Cook on high heat for 2-3 minutes to get a smoky street-style flavor.

  7. Turn off the heat, drizzle the lemon juice over the top, and garnish generously with fresh coriander.
