Ingredients
Quantities are for 2 servings.
Ten minutes. Chop the apple last, at the very end, so it does not brown before it reaches the table.
Method
Wash, peel, and chop the cucumber into fine, bite-sized cubes. Place them in a large mixing bowl.
Chop the apple into similar-sized cubes just before making the salad to prevent it from turning brown. Add it to the bowl.
Add the finely shredded mint leaves. Mint pairs beautifully with both cucumber and apple.
Sprinkle the black salt and roasted cumin powder evenly over the fruit and veg.
Drizzle fresh lemon juice and toss gently to coat everything. The lemon juice balances the sweetness of the apple.
How to tell it's done
Incredibly juicy and crunchy, with a delightful interplay of sweet apple, refreshing cucumber, and earthy cumin.

Getting it right
Tip
Leaving the skin on the apple provides a beautiful red contrast to the green cucumber and mint, boosting visual appeal and fiber.
What to serve it with
A perfect cooling salad to serve alongside spicy Paneer curries or simple Jain meals.
Common mistakes
- The apple browns before serving.
- Cut it last and toss it in the lemon juice straight away, before the cucumber and mint go in. Apple cut early browns whatever you do to it afterwards.
- The mint bruises and turns black.
- Shred it with a sharp knife in one pass, or tear it by hand. Chopping mint repeatedly crushes the leaves and they darken within minutes.
Substitutions
- A firm pear works in place of the apple and is sweeter and softer.
- Chaat masala can stand in for the black salt and cumin together if you have it to hand.
Storing and reheating
Serve within the hour. The cucumber can be chopped ahead and kept covered, but the apple and mint both need to go in at the last moment.
