Ingredients

Quantities are for 2 servings.

You'll need: Stovetop, Oven.

Allow 2 hours for the steamed custard to chill before unmolding; warm custard will collapse when inverted.

Method

  1. Make the caramel: In a small pan, add sugar and water. Cook on medium heat WITHOUT stirring until the sugar melts and turns into a deep amber/brown caramel.

  2. Quickly pour the hot caramel into a 6-inch round steel or glass mold. Swirl it to coat the bottom evenly. It will harden instantly. Set aside.

  3. In a bowl, mix custard powder and agar agar powder with a small portion of the cold milk to form a lump-free slurry.

  4. In a saucepan, bring the remaining milk and condensed milk to a gentle boil.

  5. Reduce heat and slowly pour the custard-agar slurry into the boiling milk while stirring continuously to avoid lumps.

  6. Cook for 3-4 minutes until the mixture thickens enough to coat the spoon. Turn off the heat and stir in the vanilla extract.

  7. Pour this hot custard mixture directly over the hardened caramel in the mold.

  8. Cover the mold with foil. Steam it in a large pot (like a dhokla steamer) for 15 minutes. Alternatively, let it set directly in the fridge without steaming if you used agar agar.

  9. Let it cool to room temperature, then chill in the fridge for at least 2-3 hours.

  10. To serve, run a knife around the edges. Place a plate upside down over the mold and flip quickly so the caramel runs over the soft custard.

How to tell it's done

The custard should unmold in one piece, wobble gently and cut softly with a spoon.

Getting it right

Tip

Do not stir caramel once the sugar starts melting. Swirl the pan instead, then pour before it darkens too much.

What to serve it with

Serve chilled after lunch or dinner, spooning the loose caramel syrup over each portion.

Common mistakes

The custard splits or tastes bitter.
Steam on medium-low heat and stop the caramel at deep amber. Too much heat makes the milk grainy and the caramel harsh.

Storing and reheating

Refrigerate caramel custard covered for up to 3 days. Do not freeze it; the gel and dairy base can weep after thawing.
