  1. In a large mixing bowl, make the dry coating: combine the buckwheat (kuttu) flour, the singhara flour that gives it crispness, coarsely crushed chillies, black pepper, rock salt and coriander.

  2. Add water a little at a time, whisking hard, until the batter is smooth and free of lumps. It is right when it coats the back of a spoon in a thick layer that does not slide off; a thin, runny batter will not work.

  3. Elevate your deep-frying lipid to a decisive medium-high parameter within a heavy kadhai. Calibrate the thermal state: a micro-droplet of batter must rocket to the surface instantaneously without adopting an instant sear.

  4. Plunge a pre-dried paneer block into the batter, ensuring a hermetic, monolithic seal across all six geographic faces.

  5. Carefully glide the armored paneer into the thermal bath. Constrain the payload to 4-5 units per batch, strictly dictated by the pan's surface area, to prevent a temperature crash.

  6. Leave them alone for a full 60 seconds so the coating sets and firms up. Once it has, turn them carefully with a slotted spoon.

  7. Sustain the fry until the exterior crust transitions into a fiercely dark brown, echoing absolute crispness (anticipate the naturally dark shade of polymerized Kuttu).
