Method
In a broad mixing bowl, thoroughly whisk together the whole wheat flour, baking powder, baking soda, salt, and sugar to ensure even distribution of the leavening agents.
Add the curd and cooking oil, rubbing them into the flour mixture with your fingertips until it feels crumbly.
Gradually stream in lukewarm water, kneading deliberately to form a soft, remarkably pliable dough. Cover with a damp kitchen towel and mandate a 15-20 minute resting phase.

Pinch off a medium-sized dough portion. Roll it out uniformly into a slightly thick round or teardrop shape, maintaining an even thickness throughout.
Using a pastry brush or your fingers, apply a generous and even coat of water over the entire exposed top surface of the rolled roti.
Heat a heavy iron tawa over medium-high heat. (Crucial: Do not use a non-stick pan, as the adhesion technique will fail).
Carefully lift the roti and slap it, WET side down, directly onto the scorching iron tawa. Gently press the perimeters to ensure it seals and adheres firmly.
Observe for 30-40 seconds until prominent, aerated bubbles begin to erupt across the surface.

Grasp the tawa's handle securely and invert it entirely over the open, direct flame. Hover and move the inverted tawa in circular motions to fire-roast the top surface until authentic, charred golden-brown spots manifest.
Turn the tawa upright again and scrape the roti off the iron surface with a flat spatula.
Brush the blistered top with melted butter and serve immediately.
