Method

  1. Place the boiled and dried sweet corn kernels in a bowl. Crush them lightly with a potato masher so they do not burst through the dough.

  2. Add grated mozzarella cheese, mixed herbs, chilli flakes, and salt to the crushed corn. Mix well to form the stuffing.

  3. Pinch a lemon-sized ball of the prepared whole wheat dough. Roll it into a small 4-inch circle.

  4. Place a large scoop of the corn and cheese mixture in the center. Carefully gather the edges of the dough, pinch them together, and seal it completely to form a stuffed ball.

  5. Dust the stuffed ball with dry flour. Using very gentle pressure, roll it out into a moderately thick paratha.

  6. Heat a tawa over medium heat. Place the paratha on it and let it roast until small bubbles appear on the top surface.

  7. Flip the paratha, apply butter generously. Flip again and apply butter on the other side. Press lightly with a spatula.

  8. Roast until both sides are golden and crispy, and the cheese has melted inside. Serve immediately.
