Method
Make the dough: In a wide mixing bowl, combine the maida, sugar, part of the salt, and baking soda. Make a well in the center and add the curd and cooking oil.
Mix with your fingers. Add lukewarm water gradually and knead into a soft, elastic dough for 5-7 minutes. Cover with a damp cloth and rest for 2 hours.

Make the stuffing: Combine the cooled mashed potatoes with finely minced onions, green chillies, crushed coriander seeds, anardana, garam masala, red chilli powder, remaining salt, and fresh coriander.
Fold the filling gently. Do not overwork or over-mash the potatoes at this stage, or the starch will turn the mixture sticky and hard to handle.
Pinch off a substantial, lemon-sized portion of the rested dough. Lightly dust the surface and roll out a preliminary 4-inch base disc.
Deposit a dense hemisphere of the spiced potato stuffing into the center. Gather the perimeter dough upwards, crimping it securely at the apex to trap the filling, then gently flatten the parcel.
Adorn the crown of the dough ball with a sprinkle of fresh coriander leaves, pressing them gently into the surface to adhere.
Utilizing absolute finesse, roll the stuffed parcel out into an oval or round shape spanning approximately 6 inches. Excessive downward pressure will inevitably detonate the delicate dough walls.
Invert the crafted kulcha and paint the untreated backside generously with water. (This hydro-layer acts as the binding agent to the tawa).
Elevate an iron tawa (strictly avoid non-stick) over medium-high heat. Slap the hydro-coated underside of the kulcha directly onto the smoking iron.
Allow it to sear for 60 seconds until prominent, balloon-like bubbles establish themselves on the top surface. Confidently invert the entire tawa over the direct, naked flame. Fire-roast the top face until it is adorned with charred, authentic tandoori speckling.

Remove the kulcha from the tawa with a spatula. Clap it lightly between your palms for the chur-chur texture, brush with butter, and serve hot.
How to tell it's done
The kulcha should have a flaky chur-chur crust with charred spots and a soft, spicy potato filling inside.
