Method
Melt the ghee in a heavy-bottomed non-stick pan or a sturdy kadhai.
Add the well-mashed sweet potatoes. Stir and roast them steadily over low to medium heat for 7-8 minutes.

This intensive fat-roasting phase is non-negotiable; it completely eradicates the raw, starchy profile, replacing it with a profound, caramelized aromatic depth.
Pour in the warm milk along with the saffron infusion. Stir continuously until the sweet potato has taken up all the liquid and the mixture is completely smooth.
Add the sugar. The halwa will loosen and turn more fluid as the sugar melts into it.
Persist with a constant stirring rhythm for an additional 5 minutes. The endpoint is achieved when ambient moisture evaporates entirely, allowing the halwa to form a singular, hyper-glossy sphere that rejects the pan walls.
