Method

  1. Dry roast the groundnuts until they develop a crisp exterior. Allow them to cool before peeling and processing into a coarse crush.

  2. Heat the ghee in a heavy skillet over a medium flame until it is hot enough to temper.

  3. Add the cumin seeds to the hot ghee and let them crackle.

  4. Fold in the crushed green chillies, executing a brief sauté to infuse the lipid base with heat.

  5. Add the cold boiled potato cubes and the rock salt. Toss gently so everything is coated without breaking the potato up.

  6. Sustain the medium heat for 3-4 minutes, allowing the potatoes to develop a highly desirable, light golden sear on their edges.

  7. Shower the pan with the crushed groundnuts, mixing cohesively to integrate the textural crunch.

  8. Drop the heat and allow the flavors to harmonize for a final 1-2 minutes.
