You'll need: Stovetop.

Method

  1. Elevate the specified cooking oil (peanut preferred) to a medium thermal state within a broad, premium non-stick culinary pan.

  2. Add the cumin seeds to the hot fat and let them crackle. Follow straight away with the finely minced chillies. Sauté for about 10 seconds to release their heat into the oil.

  3. Add the diced boiled plantain to the pan. Toss gently so every piece is coated in the spiced oil.

  4. Sprinkle the rock salt evenly over the top. Stir-fry over steady medium heat for 4-5 minutes. The aim is to brown the edges of the plantain lightly without breaking up the pieces.

  5. Fold in the coarsely crushed roasted groundnuts and mix them through. They do two jobs: they soak up any moisture the plantain releases, and they add crunch. Cook for another 2 minutes.

  6. Turn off the heat. Drizzle the lemon juice evenly over the surface, then scatter over plenty of chopped coriander.

  7. Give it one last careful toss to bring the lemon and coriander through, then serve.

How to tell it's done

Soft, starchy bites with golden edges, heavily contrasted by the dry, nutty crunch of coarse peanuts.

Tip

Raw bananas mimic the texture of potatoes flawlessly. This is the perfect potato substitute for Jains or anyone avoiding root vegetables during fasting.

Pairs wonderfully with Rajgira (Amaranth) pooris or simple Sama rice.
