Method

  1. Elevate the temperature of the mustard oil in a heavy-bottomed kadhai until a distinct smoke rises from the surface. Lower the flame immediately to stabilize the fat and burn off its intense pungency.

  2. Drop the mustard seeds and cumin seeds into the prepared oil. Step back and let them splutter wildly. Introduce the crushed garlic and sauté briskly until the edges toast into a light brown.

  3. Add the finely chopped onions along with the slit green chillies. Sauté them patiently until the onions soften and turn a pale, translucent gold.

  4. Tumble the cubed potatoes into the pan, dusting them immediately with the turmeric powder. Mix assertively to coat the tubers, secure the lid, and cook on a low simmer for 5-6 minutes until the potatoes are half-tenderized.

  5. Drop the thick eggplant (baingan) cubes into the vessel and season with the measured salt. Toss the entire assembly thoroughly to integrate the new vegetable.

  6. Recover the pan. Cook on low-medium heat for 7-8 minutes. Eggplants contain a massive volume of cellular water; trapping the steam forces them to release this moisture and cook at a highly accelerated rate.

  7. Once a fork easily pierces the vegetables, bury the roughly chopped tomatoes in the pan. Sprinkle the coriander powder and red chilli powder over the mass and fold gently to avoid shattering the softened eggplant.

  8. Leave the pan completely uncovered and cook for a concluding 4-5 minutes. This drives off the excess steam, reducing the tomatoes to a mush and cementing the dry nature of the dish.

  9. Finish by scattering the garam masala and the fresh coriander over the top. Give it one last very gentle toss, then turn off the heat.

How to tell it's done

A cohesive but chunky dry scramble. The potatoes must present as soft but geometrically intact, while the eggplant surrenders entirely, melting down to form a thick, clinging, and deeply savory spiced wrapper.

Getting it right

Tip

Cut the potatoes and aubergines into cubes of the same size so they cook in the same time. Add the tomatoes only at the end: their acidity stops the potatoes softening, and added early it leaves them underdone.
