Method
In a pan, methodically dry roast the Kashmiri red chillies, coriander seeds, fennel seeds, black peppercorns, cloves, cinnamon, and star anise until their deep aromas are fully released. Set aside.
In the same skillet, heat a tiny splash of coconut oil. Sauté a portion of the onion, the garlic, and the ginger until profoundly caramelized. Introduce both fresh and dry grated coconut. Continue roasting until the coconut achieves a dramatic dark golden-brown shade.
Allow these deeply roasted components to cool. Blend them impeccably along with the nutmeg, tamarind paste, and a little water to craft a velvet-smooth, dark, and complex Xacuti masala paste.
Warm the remaining authentic coconut oil in a cooking pot. Add the remaining finely diced onion and sweat it gently until translucent.
Toss in the quartered mushrooms, searing them on high heat for 3-4 minutes until they release their natural moisture and shrink down with a robust bite.

Spoon the spectacular Xacuti masala paste over the mushrooms, adding salt. Cook together for 5 minutes, ensuring every single mushroom is coated in the luxurious spice blend.

Add water to dictate your perfect gravy consistency. Cover closely and allow it to simmer gently on low heat for 10 minutes to harmonize the flavors.

Verify the seasoning balance. Switch off the flame and let the curry rest momentarily, allowing the complex notes to marry beautifully before serving.
