Ingredients

Quantities are for 2 servings.

You'll need: Stovetop.

Fifteen minutes start to finish. Shred the cabbage before you heat the pan — once the mustard seeds pop there is no time to chop.

Method

  1. Heat coconut oil in a wide pan or wok on medium heat.

  2. Add mustard seeds and let them pop. Immediately add the slit green chillies and curry leaves, sautéing for a few seconds.

  3. Add the finely shredded cabbage and salt. Toss the cabbage continuously on medium-high heat for 5-6 minutes.

  4. Do not add any water, and do not cover the pan. Cabbage should be stir-fried in its own moisture to prevent it from getting soggy.

  5. Once the cabbage has shrunk slightly but still retains a vibrant color and crunch, turn off the heat.

  6. Add the freshly grated coconut and mix gently. Serve warm.

Getting it right

Tip

Foogath is defined by its simplicity. Never add turmeric or heavy masalas; the dish should look pale green and white, tasting purely of sweet cabbage, coconut, and sharp green chilli.

What to serve it with

An essential side dish in a Goan meal, best served with Goan Fish Curry and Rice, or simply with hot Chapatis.

Common mistakes

The cabbage goes limp and watery.
High heat, wide pan, no lid, no water — exactly as the steps say. Covered, cabbage sits in the steam it gives off and stews. Foogath should still have a bite when it leaves the pan.
The coconut tastes toasted and dry.
Fold it in after the heat is off. It is a fresh finish rather than a cooked ingredient, and even a minute in a hot pan browns it and takes the sweetness away.

Substitutions

  • Frozen grated coconut works when fresh is not around; thaw it and add it off the heat as usual. Desiccated coconut is a poor stand-in — it is dry and sweetened in some brands, and foogath depends on the moisture of fresh. Any neutral oil replaces coconut oil, though the Goan character goes with it.

Storing and reheating

Keeps two days in the fridge, though the crunch fades on the first night. Reheat quickly in a hot pan rather than a microwave, which makes it soggy. It does not freeze.
