Ingredients

Includes 15 minutes of resting time after baking so the pasta, mince sauce, and bechamel set into clean layers.
Method
Boil the macaroni pasta until just firm, drain it, and keep it aside.
Heat olive oil in a pan and cook the onion until soft.
Add the garlic and mutton mince, then cook while breaking up the mince until it browns.
Stir in tomato puree, cinnamon, oregano, salt, and black pepper, then simmer until thick.
Melt butter in a small pan, add flour, and cook for a minute without browning.
Slowly whisk in warm milk and cook until the sauce thickens.
Remove from heat, cool for 2 minutes, then whisk in the beaten egg and nutmeg.

Layer the pasta in a small baking dish, spread the mince sauce over it, and top evenly with the bechamel.
Bake at 190°C until the top is set, lightly golden, and bubbling at the edges.
Rest for 15 minutes before slicing so the layers hold together.
