Ingredients

Quantities are for 2 servings.

You'll need: Stovetop.

Active time only; chop the vegetables finely before cooking the masala into the pav.

Method

  1. Heat half of the butter in a wide flat pan or tawa over medium heat. Add the minced garlic and chopped onions, sautéing until the onions turn translucent.

  2. Add the chopped capsicum and tomatoes. Sprinkle a pinch of salt to help the tomatoes break down faster. Cook and mash thoroughly with a potato masher until it forms a thick paste.

  3. Stir in the Pav Bhaji Masala, red chilli powder, and half of the fresh coriander. Cook for another 2 minutes until the butter releases from the sides.

  4. Squeeze in the lemon juice, mix well, and slide the masala to one side of the tawa.

  5. Melt the remaining butter in the center of the tawa. Open the slit Pav Buns and place them face down on the butter to toast lightly.

  6. Scoop a generous portion of the spicy masala and spread it evenly inside the toasted buns. Fold them close and wipe the outsides with the remaining masala on the tawa.

  7. Garnish with the remaining fresh coriander and serve immediately while hot and buttery.

How to tell it's done

The pav should be buttery and soft, with the tangy masala absorbed into the cut sides.

Tip

For a true street-style experience, generously use a potato masher while cooking the tomatoes and capsicum to ensure a smooth, homogeneous spread.

Serve hot with extra chopped onion, a lemon wedge, and cutting chai.
