Ingredients

Method

  1. Steam the mixed sprouts for 3-4 minutes until they are slightly tender but still hold a firm bite. Avoid boiling them directly in water as they get mushy.

  2. In a large mixing bowl, combine the cooled, steamed mixed sprouts and boiled sweet corn kernels.

  3. Add the finely chopped onions, tomatoes, and green chillies to the bowl.

  4. Sprinkle the chaat masala and black salt evenly over the mixture.

  5. Squeeze the fresh lemon juice and garnish with chopped coriander. Toss well until all ingredients are perfectly amalgamated.

Getting it right

Tip

Pomegranate seeds can be added for extra sweetness and a beautiful visual contrast against the green sprouts and yellow corn.

Common mistakes

The sprouts turn soft and the salad tastes boiled.
Steam them for three or four minutes and never boil them in water, as the recipe warns. Sprouts dropped into a pan of water waterlog and collapse, and there is no crunch left to dress.

Storing and reheating

Eat the same day. Raw sprouts keep three days in a breathable box and boiled corn two, so hold both at that stage and combine when you serve.
