Method
In a wide bowl, blend whole wheat flour, gram flour (besan), chopped fenugreek leaves, all dry spices, ginger-chilli paste, salt, and the measured oil. Rub thoroughly between your palms.
Add the curd and start kneading. Fenugreek leaves release moisture, so add extra water only if needed to form a soft, cohesive dough.
Cover properly and allow the dough a 10-minute resting period to harmonize flavors.
Portion out small, lime-sized balls. Dust minimally with dry flour and roll them into nearly translucent, 6-inch thin circles.
Place the raw thepla onto a medium-hot tawa.
At the first sign of tiny bubbles, flip the thepla and brush the surface lightly with oil.
Flip once more, coat the opposing side with oil, and press swiftly with a spatula. Theplas demand a remarkably fast cooking time due to their thinness.
Remove them as soon as light golden freckles appear. Stack them in a cloth-lined container as you go; the steam trapped between the layers keeps them soft.
How to tell it's done
Theplas should be thin, speckled with fenugreek, and flexible enough to roll without tearing.
Getting it right
Tip
For travel, use a little more oil and curd and avoid water while kneading; the theplas stay softer for longer.
What to serve it with
Serve authentically alongside sweet mango Chunda, potent garlic pickle, or a steaming cup of masala chai.
