You'll need: Stovetop.
Active time includes resting, laminating with ghee, stuffing, roasting, and crushing the naan open.
Method
Mix the all-purpose flour, baking soda, and a small pinch of salt. Add lukewarm water and knead into a very soft dough. Cover and rest for 15 minutes.

Make the filling: In a bowl, mix cooled mashed potato, crumbled paneer, minced onions, green chillies, chaat masala, garam masala, and the remaining salt.
Take a large dough ball and roll it into a wide, thin circle. Brush the surface with melted ghee and dust lightly with dry flour.
Make one slit from the center to the edge. Starting at the slit, roll the dough around the center to form a cone, then press it down into a layered disc and rest for 5 minutes.

Gently flatten the layered disc. Place a generous portion of potato-paneer filling in the center and seal the edges well.
Roll the parcel into a thick round naan. Brush the underside with water and place the wet side on a very hot iron tawa so it sticks.
Cook for 60 seconds, until bubbles appear. Invert the tawa over the flame and roast the top until golden and blistered. Scrape the naan free, crush it lightly between your hands for the chur chur texture, and brush with hot ghee.

Chur chur naan should be flaky and crushed on the outside, with a hot, spiced potato-paneer filling inside.
Getting it right
Tip
Crush the naan lightly right after roasting while it is still hot. This opens the flaky layers and lets ghee reach the stuffing.
What to serve it with
Serve immediately with Amritsari pindi chole, sliced onions, green chutney, and lassi.
