Method
In a dry skillet, gently toast the coriander seeds, cumin seeds, and dry red chillies until their volatile oils are released and highly fragrant. Remove and allow to cool.
In a powerful blender, grind the roasted spices and the well dry-roasted coconut with a splash of water into a very smooth, thick, dark malvani masala paste.
Bring the cooking oil to temperature in a heavy-bottomed vessel. Plunge the sliced onions into the hot oil, sautéing them unrelentingly until they caramelize into a profound, dark golden brown.
Scrape the masterful Malvani masala paste into the caramelized onions. Fry on medium heat with discipline for 5-7 minutes, waiting for the oils to decisively detach from the dense masala mass.

Add the quartered mushrooms, then the garam masala and the salt. Shake the pan so every piece of mushroom is coated in the hot spice paste.
Cover the pan tightly. Allow the assembly to simmer undisturbed for 10 minutes. The mushrooms will surrender their internal moisture, organically constructing a breathtakingly rich and dark gravy.

Tip
