Ingredients

Quantities are for 2 servings.

You'll need: Stovetop.

Twenty-five minutes, plus blanching the spinach. Nothing here simmers long — the cheese goes in at the end and the dish is served straight away.

Method

  1. Melt the butter in a pan over low heat. Add the finely minced garlic and sauté gently until fragrant, ensuring it does not turn brown.

  2. Pour in the smooth blanched spinach puree. Stir well and cook for 2-3 minutes until the puree slightly deepens in color.

  3. Add the boiled sweet corn kernels into the bubbling spinach base. Mix thoroughly.

  4. Season the mixture with chilli flakes, mixed herbs, and a pinch of salt. Remember that butter and cheese will also add saltiness.

  5. Stir in the fresh cream and half of the grated cheese. Let it simmer gently until the cheese completely melts into the spinach, turning it creamy and luxurious.

  6. Transfer to a serving bowl. Top immediately with the remaining grated cheese so it melts over the warm dish. Serve.

Tip

To preserve the bright green color of the spinach, immediately plunge the boiled leaves into ice-cold water before blending.

What to serve it with

Excellent as a standalone dip with Toasted Garlic Bread or served alongside Butter Naan.

Common mistakes

The spinach turns khaki.
Blanch it briefly and cool it in cold water before blending, then cook the purée only a couple of minutes. Spinach loses its colour fast over heat, and this dish is meant to look green.
The cheese goes stringy and oily.
Stir it in over low heat and stop as soon as it has melted. Cheese held over a flame splits, and what should be a creamy sauce becomes fat sitting on top of spinach.

Substitutions

  • Any melting cheese works — processed cheese gives the stretchy café texture, mozzarella a milder one, cheddar a sharper. Frozen spinach can replace fresh: thaw and squeeze it dry before blending. Frozen corn goes in straight from the freezer. Milk with a spoonful of butter can stand in for the cream.

Storing and reheating

Keeps two days in the fridge and thickens; loosen with a splash of milk on reheating and warm it gently. It does not freeze — the cream and cheese separate on thawing.
