Bharli Vangi (Stuffed Eggplant)

Method
Make the stuffing: in a wide bowl, mix the coarsely powdered roasted groundnuts, roasted desiccated coconut, roasted sesame seeds, goda masala, red chilli powder, turmeric, ginger-garlic paste, grated jaggery, tamarind extract, salt and freshly chopped coriander until evenly combined.
Knead the mixture with your fingertips. The moisture from the tamarind, ginger-garlic paste, and jaggery should bind the dry ingredients into a thick, damp, highly aromatic paste. Taste the mixture and adjust the balance of salt, sweetness, and acidity if necessary.
Take the prepared, slit baby eggplants and pack the damp masala paste deep into the cross cuts, pressing the quarters firmly back together. Keep any leftover masala paste to form the base of the gravy.
Heat the cooking oil in a heavy-bottomed, wide kadhai over medium heat. Drop in the mustard seeds and wait for them to pop entirely.
Add the finely chopped onions to the hot oil and sauté consistently until they achieve a deep, caramelized golden-brown color.
Add all the reserved, leftover stuffing masala directly into the fried onions. Sauté this highly concentrated base in the hot oil for 1 full minute to toast the nuts and bloom the spices.
Carefully lower the stuffed eggplants into the bubbling masala base. Using tongs, rotate them gently in the pan to sear the skins and coat them in the aromatics for 2 minutes, ensuring the stuffing remains inside.

Pour sufficient warm water into the pan to reach about halfway up the eggplants. Cover the kadhai with a tight-fitting lid.
Drop the heat to low and allow the eggplants to braise slowly for 15-20 minutes. Lift the lid occasionally to baste the eggplants with the simmering liquid and check for tenderness. The dish is complete when the eggplants yield easily to a knife tip and the gravy has reduced to a thick, oil-separated sauce.

Garnish elegantly with fresh coriander and serve piping hot straight from the cooking vessel.

The eggplants should be braised until they are exceedingly tender—almost to the point of collapsing—while resting in a dark, highly textured, thick groundnut-and-coconut gravy that pools distinctively with flavorful, spiced oil at the edges.
