Method

  1. Fabricate the Chettinad Paste: In a dry skillet positioned over low heat, gently roast the dried red chillies, coriander seeds, fennel, cumin, peppercorns, cinnamon, cloves, and cardamom until they release a highly potent, toasted aroma (roughly 3 minutes).

  2. Introduce the grated coconut to the toasted spices in the pan. Continue roasting until the coconut fibers turn a crisp, light golden color. Remove from heat, cool completely, and blitz in a grinder with a splash of water until it forms a unified, smooth paste.

  3. Heat the sesame oil in a heavy-bottomed kadhai. Add the curry leaves and stand back; they splutter hard in hot oil.

  4. Add the finely chopped onions. Maintain medium heat and fry the onions constantly until they reach a deep, caramelized golden-brown state.

  5. Stir in the ginger-garlic paste. Sauté for a solid minute to completely eliminate the raw bite of the aromatics.

  6. Add the chopped tomatoes with the turmeric. Cook the base down until the tomatoes collapse completely and the oil comes out of them.

  7. Add the bone-in chicken and the salt. Raise the heat and fry hard for 5 minutes to sear the chicken and hold its juices in.

  8. Pour the freshly ground Chettinad masala paste directly over the seared meat. Toss vigorously to ensure every crevice of the chicken is thickly coated with the dark spice paste.

  9. Add enough hot water to build a robust gravy. Secure a lid over the pot, reduce the heat to a low-medium setting, and allow it to simmer undisturbed for 20-25 minutes until the chicken is fork-tender and cooked straight through to the bone.

  10. Remove the lid. If the gravy appears too watery, boil on high heat for 2 final minutes to thicken it. Garnish heavily with fresh coriander and serve immediately.

A dark, gritty, exceptionally thick, and intensely aromatic gravy tightly gripping soft, bone-in chicken pieces, exuding massive notes of toasted black pepper and fennel.

The monumental, complex flavor of this dish relies entirely on dry-roasting the spices *with* the coconut prior to grinding. Frying the curry exclusively in traditional Gingelly (sesame) oil provides the essential earthy backbone.
