Ingredients

You'll need: Stovetop, Pressure Cooker.

Allow 10 minutes for rinsing the pigeon peas thoroughly before cooking; there is no long soaking step in this quick paruppu.

Method

  1. Load the washed pigeon peas, turmeric powder, and measured water into a pressure cooker. Add a minimal drop of sesame oil to mitigate frothing during the boil.

  2. Secure the lid and pressure cook for 4-5 whistles, demanding the lentils reach an extremely soft, compromised state.

  3. After natural depressurization, open the cooker. Mash the dal while hot with a wooden churner or ladle until smooth, then season with salt.

  4. Heat the sesame oil in a small tempering pan. Add the mustard seeds and let them splutter.

  5. Introduce the cumin seeds, dry red chillies, curry leaves, and asafoetida. Sauté briefly to bloom the spices.

  6. Immediately decant the hot tempering over the mashed lentils, folding it in gently to preserve the aromatic layers.

A viscous, completely velvety, homogenized paste absent of any intact lentil structure.
