Method

  1. Heat the cooking oil and butter together in a pan over medium heat. Add the cumin seeds and let them sizzle.

  2. Add the finely chopped onions and fry until they are golden brown.

  3. Stir in the ginger garlic paste and cook for a minute until the raw smell disappears.

  4. Pour in the tomato puree. Add turmeric powder, red chilli powder, coriander powder, and salt. Cook this masala on medium heat until it thickens and the butter separates from the edges.

  5. Add the diced capsicum to the rich tomato masala. Sauté for 2-3 minutes so the capsicum softens slightly but retains a crisp bite.

  6. Toss in the boiled sweet corn kernels. Mix thoroughly so the thick masala coats the corn and capsicum.

  7. Sprinkle 2-3 tablespoons of water if the masala is too dry, cover with a lid, and simmer for 3 minutes to blend the flavors.

  8. Remove the lid, sprinkle garam masala, and give it a final stir. Turn off the heat, garnish with fresh coriander, and serve.
