Quantities are for 2 servings.

You'll need: Oven.

No inactive time; the 90 minutes is covered oven time, followed by a short uncovered spell to brown and crisp the potato top.

Method

  1. Heat the oven to 170°C and lightly butter a small baking dish.

  2. Layer the lamb, onion, carrot, bay leaf, salt, and pepper in the dish.

  3. Pour in the beef stock so it comes partway up the filling but does not cover the potato topping.

  4. Arrange the sliced potatoes on top in overlapping layers.

  5. Brush the top with the remaining butter and season lightly.

  6. Cover and bake until the lamb is tender and the potatoes are cooked through.

  7. Uncover and bake again until the potato topping is golden and lightly crisp.

  8. Rest briefly, finish with parsley, and serve hot.

How to tell it's done

The lamb should be tender in a light gravy, with soft lower potatoes and a golden crisp top layer.

Tip

Keep the first bake covered so the lamb softens before the potato topping is browned.

What to serve it with

Serve with peas, cabbage, or pickled vegetables to balance the rich lamb.

Common mistakes

The potato topping is pale and soft.
Take the lid off for the last stretch and brush the potatoes with butter. A hotpot baked covered throughout gives you tender lamb under a layer of steamed potato, which is not the dish.
The lamb is tough.
Low oven, long time. Shoulder needs a couple of hours around 170°C to break down; hurried at a higher heat it stays chewy however good it looks on top.

Substitutions

  • Use Boneless Mutton as a local adaptation, but cook longer until very tender.
  • Use Vegetable Stock if Beef Stock is unavailable, though the savoury depth will be lighter.
  • Do not slice the potatoes too thick, or the topping may stay firm while the lamb cooks.

Storing and reheating

Keeps three days in the fridge and the flavour deepens. Reheat covered in a moderate oven, then uncover to re-crisp the top. It freezes for two months, though the potato softens on thawing.
