Method
Warm a little of the ghee in a skillet. Fry the thinly sliced onions slowly over medium-low heat until they are deep brown, crisp and caramelized (birista). Lift them onto kitchen paper to crisp up further.
In the residual heated pan, introduce an additional touch of ghee. Briefly flash-fry the cashews, blanched almonds, and raisins until the nuts are golden and the raisins plump attractively. Extract and reserve.
Bring the principal volume of ghee to temperature in a heavy-bottomed culinary pot. Bloom the assorted whole spices to rapidly release their profound aromatic properties.
Add the drained basmati to the fat. Coat and toast the grains very gently over low heat for 2-3 minutes, so they hold together and do not break later.
2–3 min
Integrate the dry ginger powder (saunth), distinctive fennel powder (saunf), and salt, employing a gentle folding technique to disperse the dry aromatics.
Pour in the specified measure of hot water or light vegetable broth. Instigate a rolling, vigorous boil.
Immediately choke the heat to its absolute lowest parameter. Hermetically seal the pot with a heavy lid and braise for 12-15 minutes until every drop of liquid is unequivocally absorbed.
12–15 min
Turn off the heat. Lift the lid quickly, spoon the saffron milk evenly over the rice, and cover it again straight away. Let it rest, undisturbed, for 10 minutes.
10 min
Uncover the masterpiece and elevate the grains utilizing a fork. Fold in exactly half of the reserved crispy dry fruits and caramelized onions.
Transfer immediately to a regal serving vessel. Embellish luxuriously with the remaining fried onions, toasted nuts, crisp fresh apple chunks, and jewel-like pomegranate seeds.
How to tell it's done
Expect stunningly separated, hyper-elongated grains bursting with saffron aroma, rhythmically interrupted by the rich snap of toasted nuts and the sudden, vivid hydration of crisp, fresh fruits.
Getting it right
Tip
The hallmark of an authentic Kashmiri Pulao is its refined, sweet-savory profile devoid of aggressive heat. Never pollute the dish with turmeric, red chilli, or alliums like garlic; rely solely on the sophisticated sweetness of caramelized fruits and onions.
What to serve it with
An opulent creation designated for high celebration. Counterbalance its sweet notes by presenting it alongside an impossibly rich, cream-heavy curry such as Malai Kofta or a sovereign Shahi Paneer.
