Put the soaked rice and dal in a heavy pressure cooker with the turmeric, salt, a little of the ghee and the measured water.
Secure the lid and cook over a steady medium flame for 4-5 whistles. The objective is to achieve a completely compromised, mushy structure where the grains and lentils become indistinguishable.
Let the pressure drop on its own. Open the cooker and beat the khichdi hard with a whisk or the back of a ladle until it is smooth and creamy.
For the tadka, heat the remaining ghee in a small pan until it smokes. Add the cumin seeds and let them crackle hard.
Swiftly add the asafoetida (hing), finely chopped garlic, and dried red chilli. Sauté expertly until the garlic achieves a deep, resonant golden-brown roast without crossing into bitterness.
Immediately pour this volatile, aromatic fat directly over the emulsified khichdi. Fold with conviction to integrate the robust flavors entirely.
