Method

  1. Heat oil gently in a pan. Drop in the cumin seeds and allow them to crackle, followed immediately by the asafoetida.

  2. Pour in the fresh tomato puree and sauté for 3-4 minutes until the oil begins to separate elegantly from the sides.

  3. Lower the flame to its minimum setting and incorporate the whisked curd. Stir continuously and swiftly to prevent the dairy from splitting.

  4. Mix in the turmeric powder, red chilli powder, coriander powder, and garam masala. Cook the spices together for 2 minutes.

  5. Add a splash of water to refine the gravy's consistency. Stir in the jaggery powder and salt to balance the sweet and savory notes.

  6. Introduce the boiled raw banana cubes, grapes, and cashew halves. Mix with a gentle hand so the delicate fruits and nuts are lushly coated in the tangy-sweet sauce.

  7. Cover the pan and simmer on very low heat for 3-4 minutes, just long enough to warm everything through. Any longer and the grapes collapse.

  8. Turn off the heat, gracefully fold in the fresh cream, and present the dish immediately.
